# Directions:

02 - Heat olive oil in a medium skillet over medium heat until shimmering. Add chopped onion and sauté for 5-7 minutes until translucent and beginning to caramelize.
03 - Stir in minced garlic and cook for 1-2 minutes, being careful not to burn. Remove from heat and allow to cool slightly.
04 - In a large mixing bowl, beat together cream cheese and sour cream until smooth and combined.
05 - Add grated smoked Gouda, Worcestershire sauce, Dijon mustard, black pepper, and salt to the dairy mixture. Mix thoroughly until well incorporated.
06 - Gently fold the cooled sautéed onions and garlic, along with 2 tablespoons of chopped chives, into the cheese mixture until evenly distributed.
07 - Pour the mixture into an oven-safe baking dish and spread evenly across the bottom.
08 - Bake for 20-25 minutes until the dip is heated through, bubbling at the edges, and golden on top.
09 - Remove from oven and allow to rest for 10 minutes. Top with additional fresh chives if desired.
10 - Transfer to a serving dish and serve warm with tortilla chips or fresh-cut vegetables.

# Expert Tips:

01 -
  • The deep, smoky notes of the Gouda elevate a simple cheese dip into a gourmet appetizer.
  • Caramelized onions and garlic provide a sweet and savory base that balances the tangy cream cheese.
  • It is a versatile crowd-pleaser that pairs perfectly with everything from salty tortilla chips to crisp, fresh vegetables.
02 -
  • Ensure your cream cheese is fully softened to room temperature before mixing to achieve a perfectly smooth and lump-free consistency.
  • Sauté the onions slowly until they are truly translucent and starting to caramelize to unlock their natural sweetness.
  • Don't skip the 10-minute rest after baking; it allows the dip to set slightly so it stays on your chips and veggies better.
