01 - 1½ cups smoked Gouda cheese, grated
02 - 8 oz cream cheese, softened
03 - 1 cup sour cream

04 - 1 medium onion, finely chopped
05 - 2 cloves garlic, minced
06 - 2 tablespoons fresh chives, chopped

07 - 1 teaspoon Worcestershire sauce
08 - 1 teaspoon Dijon mustard
09 - ½ teaspoon black pepper
10 - ½ teaspoon salt
11 - 1 tablespoon olive oil

# Directions:
01 - Set oven to 350°F and allow to fully preheat.
02 - Heat olive oil in a medium skillet over medium heat until shimmering. Add chopped onion and sauté for 5-7 minutes until translucent and beginning to caramelize.
03 - Stir in minced garlic and cook for 1-2 minutes, being careful not to burn. Remove from heat and allow to cool slightly.
04 - In a large mixing bowl, beat together cream cheese and sour cream until smooth and combined.
05 - Add grated smoked Gouda, Worcestershire sauce, Dijon mustard, black pepper, and salt to the dairy mixture. Mix thoroughly until well incorporated.
06 - Gently fold the cooled sautéed onions and garlic, along with 2 tablespoons of chopped chives, into the cheese mixture until evenly distributed.
07 - Pour the mixture into an oven-safe baking dish and spread evenly across the bottom.
08 - Bake for 20-25 minutes until the dip is heated through, bubbling at the edges, and golden on top.
09 - Remove from oven and allow to rest for 10 minutes. Top with additional fresh chives if desired.
10 - Transfer to a serving dish and serve warm with tortilla chips or fresh-cut vegetables.
